The Agave Margarita is the highest-volume cocktail in any event or bar program — batch it in a 5-gallon keg on N₂ and you have a silky, consistent pour from the first glass to the last. Top Hat Agave Margarita Batching Concentrate delivers real agave, citrus, and lime balance at scale with no scratch work required.
The Agave Margarita Batching Concentrate is the reason this program runs — real agave nectar, citrus, and lime in a formula developed specifically for high-volume keg batching. No Cointreau, no triple sec, no simple syrup. Just the concentrate, the tequila, and water. Optional fresh lime juice for the elevated version.
Batch Method
- Add 5 liters Tequila to a clean 5-gallon Cornelius keg.
- Add 4 qts Top Hat Agave Margarita Batching Concentrate.
- Add 16 oz fresh lime juice if using.
- Add 10 qts cold filtered water.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Pressurize with N₂. See instructions below.
- Refrigerate minimum 12 hours before first service.
- Serve ~6 oz over ice. Garnish with sliced lime; offer a salted rim option.
- Reshake twice daily to re-integrate ingredients.
Pro move: Pre-salt a stack of cups at the start of service — it's a 2-second step per cup that transforms a standard pour into a premium margarita experience. Tajín is a quick upgrade worth offering alongside salt. If running the fresh lime version, squeeze day-of for maximum brightness — lime juice loses its edge after 24 hours.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Connect gray/silver Cornelius "gas in" connector to GAS IN plug on keg lid.
- Set N₂ regulator to 12–15 psi.
- Pull up pressure release ring 3 times quickly to cycle gas through keg.
- Test flow. Reduce to 10–12 psi if pouring too fast.
- Reshake twice daily before service to re-integrate all ingredients.
