The Amalfi Sunrise is an elevated, Italian-inspired batch built for 5-gallon keg service — tequila, fresh tangerine or orange juice, Top Hat Spicy Agave Nectar, and optional fresh lime, finished with a 1 oz Aperol float at service. The float creates the sunrise color effect and adds bitter citrus complexity to every pour.
The Spicy Agave Nectar is what makes this batch — hot agave adds depth and warmth that plain agave syrup can't match. The Aperol float at service creates the sunrise visual and adds the bitter orange character that defines the cocktail. Fine-strain the citrus before kegging; seeds and pulp will clog the post.
Batch Method
- Press and fine-strain 5 qts tangerine or orange juice. Chill before adding to keg.
- Add 4 liters Tequila to a clean 5-gallon Cornelius keg.
- Add 5 qts chilled citrus juice.
- Add 2 qts Top Hat Spicy Agave Nectar.
- Add 2 qts fresh lime juice if using.
- Add 6 qts cold filtered water.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Pressurize with N₂. See instructions below.
- Refrigerate minimum 12 hours before first service.
- Pour ~6 oz over ice into each glass. Garnish with sliced citrus and fresh mint or rosemary.
- Float 1 oz Aperol slowly over the back of a bar spoon onto each pour at service.
- Reshake twice daily to re-integrate ingredients.
Pro move: Tangerine juice is worth the extra effort — it's sweeter and more complex than orange and creates a deeper, more vivid color in the glass. Fine-strain everything before kegging; any pulp or seeds will clog the post or affect carbonation. Float the Aperol at service over the back of a bar spoon for the sunrise layering effect — guests see it settle before they drink it.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Connect gray/silver Cornelius "gas in" connector to GAS IN plug on keg lid.
- Set N₂ regulator to 12–15 psi.
- Pull up pressure release ring 3 times quickly to cycle gas through keg.
- Test flow. Reduce to 10–12 psi if pouring too fast.
- Reshake twice daily before service to re-integrate all ingredients.
