The Amalfi Sunrise is a spicy, citrus-forward riff on a tequila sunrise inspired by Italian aperitivo culture. Fresh orange or tangerine juice, bright lime, bittersweet Aperol, and a backbone of spicy agave nectar build a layered, golden-hour highball that looks as good as it tastes—easy to make, easy to repeat, and perfect for slow sunsets or brunch service.
Built directly in the glass, the Amalfi Sunrise layers heat from Top Hat Spicy Agave Nectar with juicy citrus and a slow-poured Aperol float for a true sunrise gradient. It is an easy, crowd-pleasing option for brunch, resorts, or home entertaining—zero proof–friendly when you swap in non-alcoholic spirits and aperitivo.
Method
- Fill a tall Collins glass completely with ice.
- Add 1.5 oz tequila or zero proof agave spirit.
- Add 2 oz fresh orange or tangerine juice.
- Add 0.5 oz fresh lime juice.
- Add 0.5 oz Top Hat Spicy Agave Nectar and give a quick stir to integrate.
- Slowly float 1 oz Aperol or zero proof aperitivo over the top for the sunrise effect.
- Garnish with an orange slice and a cherry.
Pro move: Pour the Aperol over the back of an inverted bar spoon so it settles delicately on top, giving you a clean, layered sunrise before the drink slowly blends.
