Blackberry Espresso & Tonic — Top Hat Provisions

I roast coffee. I am a complete and total 100% coffee geek. And when I tasted this at the Royal Coffee booth at the San Francisco Coffee Festival in 2024 — I almost fell over. This thing is a magic elixir.

The Blackberry Espresso & Tonic is bold, complex, and zero proof — Top Hat Cold Brew Coffee Concentrate and Top Hat East India Tonic joined by blackberry syrup for deep fruit depth. Rich, bitter, fruity, and endlessly sessionable. You have to try this. Build it with the can or make it on your soda maker.

The blackberry syrup does double duty — deep fruit, deep color, a violet bloom at the bottom of the glass. Cold brew adds roasted backbone without fighting the tonic. The quinine and the cold brew are natural partners. Royal Coffee figured that out first. We just made it easy to replicate at home.

Method

  1. Fill a tall Collins glass with fresh ice.
  2. Add 0.5 oz cold brew concentrate, then 1 oz blackberry syrup. Watch the layers.
  3. Top slowly with 4–6 oz East India Tonic. Don't stir — let it cascade.
  4. Garnish with fresh blackberries and an expressed orange peel.

  2. Add 0.5 oz cold brew, then 1 oz blackberry syrup, then 1.25 oz tonic syrup. Stir once gently.
  3. Top with 4 oz soda water from your soda maker or Club Soda can. Don't over-stir.
  4. Garnish with fresh blackberries and an expressed orange peel.

Pro move: Add the blackberry syrup last for a dramatic color bloom at the bottom of the glass.
