The Coco Electro Tonic is a zero-proof hydration showstopper — coconut water, Classic Tonic Syrup, and fresh lime, carbonated on CO₂ for a crisp, effervescent pour. The quinine bitterness of the tonic anchors the sweetness of the coconut water into something genuinely balanced and refreshing.
Coconut water batches beautifully — it carbonates well and the natural sweetness pairs perfectly with the quinine bitterness of the Classic Tonic. Fresh lime juice cuts through the coconut richness and keeps every pour bright. Works as a standalone zero-proof anchor or as a mixer base for spirits at the bar.
Batch Method
- Add 4 qts Top Hat Classic Tonic Syrup to a clean 5-gallon Cornelius keg.
- Add 32 oz fresh lime juice.
- Add 14 qts cold coconut water.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Carbonate with CO₂. See instructions below.
- Refrigerate minimum 12 hours before first service.
- Serve ~6 oz over ice. Garnish with sliced lime.
- Reshake twice daily to re-integrate ingredients.
Pro move: Use pure coconut water with no added sugar — the sweetness level is part of the balance formula. Sweetened coconut water will push the batch too sweet and muddy the quinine character. This batch also works as a mixer base with vodka, gin, or tequila added at service — put a bottle behind the bar and let guests build their own.
- Insert charging stone lid at 45° and spin to align seal. Clamp firmly closed.
- Set CO₂ regulator to 20–25 psi.
- Connect gray/silver Cornelius connector to center plug of charging stone lid.
- Pull up pressure release ring 30 times quickly. Release between each pull.
- Refrigerate 24 hours. Cold liquid absorbs carbonation better.
- Once cold: pull pressure release ring 30 more times.
- Test flow. Reduce to 15 psi if foamy. Maintain 20–25 psi without foam.
