The Cosmopolitan is a timeless crowd-pleaser built for 5-gallon keg service — vodka or gin, cranberry, and lime citrus from Top Hat Agave Margarita Batching Mix, pressurized on N₂ for a silky, smooth pour. The Margarita Batching Mix does double duty as both the citrus and sweetness backbone — no triple sec needed.
The Agave Margarita Batching Mix is the unexpected key to a great cosmo at scale — real agave, citrus, and lime concentrate replaces triple sec and simple syrup in one ingredient. The cranberry adds color and tartness, and the whole batch holds beautifully on N₂ from first pour to last.
Batch Method
- Add 5 liters Vodka or Gin to a clean 5-gallon Cornelius keg.
- Add 3 qts cranberry juice.
- Add 4 qts Top Hat Agave Margarita Batching Mix.
- Add 8 qts cold filtered water.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Pressurize with N₂. See instructions below.
- Refrigerate minimum 12 hours before first service.
- Serve ~6 oz over ice. Garnish with sliced lime.
- Reshake twice daily to re-integrate ingredients.
Pro move: Gin brings a botanical complexity that makes this batch more interesting than the vodka version — if your crowd is adventurous, try a 50/50 split of vodka and gin. The cranberry settles over time; reshake before every service period to keep the color even and the flavor balanced pour to pour.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Connect gray/silver Cornelius "gas in" connector to GAS IN plug on keg lid.
- Set N₂ regulator to 12–15 psi.
- Pull up pressure release ring 3 times quickly to cycle gas through keg.
- Test flow. Reduce to 10–12 psi if pouring too fast.
- Reshake twice daily before service to re-integrate all ingredients.
