The Elderflower Bramble is an elegant, floral batch built for upscale event and bar service — gin, elderflower, blackberry, and fresh lemon, anchored by Top Hat Lemonade Concentrate. Runs beautifully on CO₂ for a bright, effervescent pour or N₂ for a smooth, still presentation. Your choice.
This is the batch that earns its spot on a premium cocktail menu. The elderflower brings floral sweetness, the blackberry brings color and fruit depth, and the fresh lemon and Lemonade Concentrate keep the acid clean and bright. CO₂ for casual events; N₂ for white tablecloth programs.
Batch Method
- Add 5 liters Gin to a clean 5-gallon Cornelius keg.
- Add 4 × 32 oz Top Hat Lemonade Concentrate.
- Add 750 ml elderflower liqueur or syrup.
- Add 32 oz blackberry syrup or fine-strained blackberry purée.
- Add 24 oz fresh lemon juice.
- Add 8 qts cold filtered water.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Pressurize with CO₂ (sparkling) or N₂ (still) — see panels below.
- Refrigerate minimum 12 hours before first service.
- Serve ~6 oz over ice. Garnish with dehydrated lemon, fresh blackberries, and a lavender sprig.
- Reshake twice daily to re-integrate ingredients.
Pro move: Elderflower liqueur (like St-Germain) adds a bit of additional sweetness and alcohol — elderflower syrup keeps it alcohol-free. If using blackberry purée, fine-strain it before adding to avoid seeds clogging the keg post. The blackberry settles — reshake before every service period.
- Insert charging stone lid at 45° and spin to align seal. Clamp firmly closed.
- Set CO₂ regulator to 20–25 psi.
- Connect gray/silver Cornelius connector to center plug of charging stone lid.
- Pull up pressure release ring 30 times quickly. Release between each pull.
- Refrigerate 24 hours. Cold liquid absorbs carbonation better.
- Once cold: pull pressure release ring 30 more times.
- Test flow. Reduce to 15 psi if foamy. Maintain 20–25 psi without foam.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Connect gray/silver Cornelius "gas in" connector to GAS IN plug on keg lid.
- Set N₂ regulator to 12–15 psi.
- Pull up pressure release ring 3 times quickly to cycle gas through keg.
- Test flow. Reduce to 10–12 psi if pouring too fast.
- Reshake twice daily before service to re-integrate all ingredients.
