The Frozen Irish Coffee is a rich, coffee-forward frozen drink machine formula — Irish Whiskey, Irish Cream Liqueur, and Top Hat Cold Brew Coffee Concentrate in a smooth, frozen format that finishes with whipped cream. Cold brew concentrate delivers consistent coffee depth without any bitterness in the freeze.
Top Hat Cold Brew Coffee Concentrate is purpose-built for exactly this — it's a high-extraction, low-acid cold brew designed for frozen and batch cocktail programs. No bitterness, no heat degradation, consistent cup to cup. This is the espresso martini's frozen cousin, and it belongs on every St. Patrick's Day or fall/winter event menu.
Batch Method
- Combine 4 liters Irish Whiskey and 3 liters Irish Cream Liqueur in a large clean cambro or Cornelius keg.
- Add 32 oz Top Hat Simple Syrup.
- Add 3 × 16 oz Top Hat Cold Brew Coffee Concentrate.
- Add 9 qts cold water.
- Stir thoroughly to fully integrate the Irish Cream — it's thick and needs full mixing before loading the machine.
- Refrigerate the full batch. Do not freeze the full cambro — load the machine in portions.
- Pour approximately 10 qts into the frozen drink machine hopper (check your machine's max fill line).
- Set machine to frozen cocktail mode. Allow 30–45 minutes to reach proper consistency before service.
- Refill from the refrigerated cambro as the hopper empties. Stir cambro before each pour.
- Serve in appropriate frozen drink cups. Top with whipped cream.
Pro move: Irish Cream is dense and fatty — it will separate if left sitting. Stir the cambro before every machine refill and give the machine hopper a stir if it's been idle for 20+ minutes. The whipped cream top is non-negotiable — it's what makes this look premium at the bar.
