The Furiosa is a bold, complex batch built for 5-gallon keg service — smoky mezcal, bitter aperitivo, East India Tonic quinine depth, blackberry sweetness, and bright lemon. Pressurized on N₂ for a silky, non-carbonated pour that drinks like an upscale aperitivo spritz without the fizz.
A serious cocktail menu anchor. The East India Tonic brings quinine bitterness that ties the aperitivo and mezcal together — the blackberry and lemon balance the smoke and bitter. Works zero-proof with Lyre's, Free Spirits Milano, or Wilderton in place of the Mezcal and Aperol.
Batch Method
- Add 4 × 750 ml mezcal to a clean 5-gallon Cornelius keg.
- Add 4 × 750 ml Aperol or alcohol-free aperitivo.
- Add 3 × 32 oz Top Hat East India Tonic Syrup.
- Add 24 oz blackberry syrup.
- Add 24 oz lemon juice.
- Add 9 qts cold filtered water.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Pressurize with N₂. See instructions below.
- Refrigerate minimum 12 hours before first service.
- Serve ~6 oz over ice. Garnish with a fresh blackberry and expressed orange peel.
- Reshake twice daily to re-integrate ingredients.
Pro move: Express the orange peel over the glass before dropping it in — the citrus oils from the peel cut through the bitterness and smoke and add an aroma hit at the top of every pour. Takes two seconds and elevates the entire service.
- Seal the keg and shake vigorously side to side for 2 full minutes.
- Connect gray/silver Cornelius "gas in" connector to GAS IN plug on keg lid.
- Set N₂ regulator to 12–15 psi.
- Pull up pressure release ring 3 times quickly to cycle gas through keg.
- Test flow. Reduce to 10–12 psi if pouring too fast.
- Reshake twice daily before service to re-integrate all ingredients.
