Lime is the bridge. But the grapefruit is the brightness, the carbonation, the character. Method
- Add 1.5 oz Tequila (or Mezcal) and 0.5 oz fresh lime juice to a highball or Collins glass.
- Fill the glass completely with ice.
- Top with 4–6 oz Top Hat Sparkling Grapefruit Soda, poured slowly down the side to preserve carbonation.
- Give one gentle stir to integrate.
- Garnish with a grapefruit wedge and fresh herbs. Serve immediately.
Pro move: Run a lime wedge around the rim and dip it in Tajín or sea salt before building — the salty-spicy rim is a game-changer against the bright grapefruit. Swap tequila for mezcal for a smoky Paloma variation.
Swap tequila for a zero-proof agave spirit alternative (Ritual Zero Proof Tequila, Free Spirits, or similar) — or omit the spirit entirely and let the grapefruit carry the drink. The citrus brightness, carbonation, and salt rim still deliver a complete "cocktail" experience. A Paloma without alcohol is still one of the most refreshing things you can drink on a warm afternoon.
