The Sea Goddess is a coastal Gin & Tonic riff that leans floral, citrusy, and quietly luxurious. We first served this cocktail at a music festival on the waterfront area in San Diego called Wonderfront in 2022!

Sea Goddess layers Gin or Zero Proof Gin Alternative with Italicus Rosolio for bergamot and floral depth, Strong Lavender Tea* for herbaceous calm, Top Hat Lemonade Batching Concentrate for structured citrus, and a tall pour of Top Hat East India Tonic Water. Finished with dried sea moss and a dehydrated lemon wheel, it drinks like a coastal tonic—refreshing, layered, and made for long, slow evenings.
Method
- Prepare Strong Lavender Tea* in advance: steep, strain, and chill completely before building your cocktail.
- Fill a tall Collins or highball glass completely with ice.
- Add 1.5 oz Gin or Zero Proof Gin Alternative directly to the glass.
- Add 0.25 oz Italicus Rosolio.
- Add 2 oz Strong Lavender Tea*.
- Add 1 oz Top Hat Lemonade Batching Concentrate.
- Top with 4 oz Top Hat East India Tonic Water.
- Give a gentle stir to integrate without knocking out the bubbles.
- Garnish with dried sea moss and a dehydrated lemon wheel. Serve immediately.
Pro move: Use crystal-clear ice and keep your Lavender Tea extra cold for maximum sparkle and minimal dilution. If you want a more spirit-forward build, bump Gin to 2 oz and keep your tonic pour tall.
