Gas CO₂
Built to perform at volume. Batch it precise, keep it chilled, and this cocktail holds quality through the end of service.
Batch Method
- Add all spirits and concentrates to a clean 5-gallon Cornelius keg.
- Add remaining ingredients and top with cold filtered water to reach 5-gallon volume.
- Seal the keg and shake vigorously side to side for 2 minutes to fully integrate all ingredients.
- Pressurize and carbonate using CO₂. See CO₂ instructions below.
- Refrigerate minimum 12 hours before first service.
- To serve: pour ~6 oz over ice. Garnish as appropriate.
- Reshake twice daily to re-integrate settled ingredients.
Pro move: Batch all liquid ingredients at room temperature first, then chill the sealed keg before pressurizing for best flavor integration.
🍺 CO₂ Carbonation — Carbonated Draft Cocktail
- Chill all ingredients to 36–38°F before batching (cold liquid carbonates better).
- Add all ingredients to a clean 5-gallon Cornelius keg. Seal tightly.
- Connect CO₂ "gas in" connector. Set regulator to 20–25 psi.
- Lay keg on its side and roll back and forth for 2 minutes to carbonate.
- Pull pressure release ring 30 times to purge and re-charge with CO₂.
- Refrigerate 24 hours before first service for best carbonation.
