Ginger Beer on Your Soda Gun — A BIB Guide for Bars & Restaurants

Ginger Beer on Your Soda Gun — A BIB Guide for Bars & Restaurants

Moscow Mules are one of the highest-velocity cocktails on any bar menu — and every one of them needs ginger beer. What if that ginger beer came straight from your soda gun? No bottles to open, no caps to pop, no cooler space to manage. Just craft ginger beer on draft — press a button and pour. It's faster for your bartenders, it eliminates glass waste behind the bar, and at $0.29 per drink from a 3-gallon BIB, it's a fraction of what individual serves cost. That's the case for draft ginger beer: speed, sustainability, and savings — without changing the quality your guests expect.

There's a better way. At Top Hat Provisions, we manufacture craft ginger beer syrup in 3-gallon bag-in-box (BIB) format that plugs into your soda gun or fountain system with a free adaptor (we include a QCD-to-Coke or QCD-to-Pepsi connector with your first order). It runs at a standard 5:1 ratio. One box makes approximately 460 Moscow Mules. The ginger beer component of each drink costs you $0.29. Not $1.50. Twenty-nine cents.

This is craft ginger beer — organic ginger extract, cold-pressed citrus, cane sugar, apple cider vinegar — formulated by a beverage company that's been supplying bars and restaurants since 2015. Same real-ingredient approach we're known for, engineered for the speed and volume of commercial bar service. Below I'll break down exactly what the math looks like, how the system works, and which of our two ginger beer BIBs is right for your program.

Wholesale B2B Bar Operations Soda Gun BIB Moscow Mule Program Draft Ginger Beer

The bottom line: A Top Hat Ginger Beer BIB on your soda gun delivers craft ginger beer at $0.29 per drink. One 3-gallon box pours approximately 460 Moscow Mules — faster ticket times, zero glass waste, perfect consistency from the first pour to the last, and you never run out mid-rush.

The Math How BIB Works Consistency & Speed Original vs. Extra Spicy Menu Plays FAQ

The math: draft ginger beer economics

Most bar owners know their pour cost on spirits down to the penny. Here's what it looks like when you apply that same thinking to your ginger beer — comparing individual-serve formats to draft BIB:

Cost per Moscow Mule — ginger beer component only
Premium Bottles
(Fever-Tree, Q, etc.)
Mass-Market Bottles
(Goslings, Canada Dry, etc.)
Top Hat BIB
(3-Gallon Soda Gun)
Cost per serve $1.25 – $1.75 $0.60 – $0.90 $0.29
Cost per week (50 mules) $62.50 – $87.50 $30.00 – $45.00 $14.50
Cost per week (100 mules) $125.00 – $175.00 $60.00 – $90.00 $29.00
Annual cost (100 mules/week) $6,500 – $9,100 $3,120 – $4,680 $1,508
Annual savings vs. individual serves — — $4,992 – $7,592
How the BIB math works
One 3-gallon BIB = 384 oz of concentrated syrup. At a 5:1 ratio (standard for soda gun systems), that produces approximately 2,304 oz of finished ginger beer. A Moscow Mule uses 4-5 oz of ginger beer per drink. At 5 oz per serve, one BIB makes ~460 mules. At our current B2B price of $135.00 per BIB, your ginger beer cost per drink is $0.29. Your guest is paying $12-16 for that mule. The ginger beer just dropped from 10-15% of the menu price to under 2.5%.
The operational advantage of draft
Beyond per-serve pricing, a BIB delivers value that doesn't show up on an invoice: freed-up cooler space (one box under the counter replaces cases of individual bottles, giving your beer and wine more room), no glass behind the bar (safer for staff, less recycling to haul, smaller environmental footprint), zero flat product (the bag collapses as it dispenses — no air contact, no oxidation, no waste at close), and no restocking to manage during service (one BIB lasts weeks, so you never 86 a mule on a Saturday night). One box sits under the bar, connected to your gun. It's there until it's empty.

How BIB ginger beer connects to your soda gun

If you already have a soda gun system — and most bars do — adding draft ginger beer is a 10-minute job. Here's the setup:

1) The BIB format
Our ginger beer BIBs are standard 3-gallon bag-in-box containers that connect to your soda gun system. The bag collapses as syrup is dispensed, which means no air contact, no oxidation, no flavor degradation over time. The last pour tastes exactly like the first. Shelf life is excellent — 12+ months unopened, and no degradation once connected.
2) QCD connector
Our BIBs use a QCD (Quick Connect Disconnect) fitting. Most bars run Coke or Pepsi lines, which use a different connector — so we include a free screw-on QCD-to-Coke adaptor or QCD-to-Pepsi adaptor with your first BIB purchase. It threads right onto your existing line in under a minute. Once the adaptor is on, swapping BIBs is a 60-second job — same as replacing any other box.
3) 5:1 ratio — automatic
Standard soda gun systems dispense at a 5:1 ratio — 5 parts carbonated water to 1 part syrup. Our BIBs are formulated specifically for this ratio. Your soda gun handles the mixing and carbonation automatically. The bartender just presses the button. No measuring, no pouring, no extra steps. Consistent carbonation, consistent flavor, consistent volume — every single pour.
4) What you need (and what you don't)
You need: an existing soda gun or fountain system with an available line. Our BIBs use a QCD connector — if your system runs Coke or Pepsi lines, we include a free screw-on adaptor (QCD-to-Coke or QCD-to-Pepsi) with your first order. You don't need: new equipment, a plumber, a technician, additional CO₂ tanks (your existing carbonation system handles it), or a training session for your staff. If your bartender can pour from the gun, they can pour craft ginger beer from the gun.

Why draft ginger beer makes your bar run better

The cost savings get your attention. But the operational advantages are what bar managers talk about most:

Every mule is identical
The gun dispenses the exact same ratio at the exact same carbonation level every time — no variation based on which bartender is pouring or how much ginger beer they eyeball. Your Moscow Mule at 6pm tastes identical to the one at midnight. For multi-unit operators, that consistency scales across every location running the same BIB.
Faster ticket times
Grab copper mug, add ice, pour vodka, hit the ginger beer button. Done. No reaching into the cooler, no opening a cap, no deciding what to do with leftover product. You're saving 8-12 seconds per drink. That doesn't sound like much until Friday at 11pm when you're 30 tickets deep and every second matters. Across a busy shift, that's real throughput.
Eco-friendly & zero waste
A BIB sits under the counter, dispenses until empty, and gets recycled as a flat piece of cardboard. No glass to haul, no flat product at end of night, no wasted cooler space. The bag collapses as syrup is drawn out, so every ounce gets used — there's nothing left behind. For bars focused on sustainability, draft ginger beer dramatically reduces single-use packaging and overall waste footprint.
You never 86 a mule again
One BIB makes ~460 drinks. For a bar doing 50 mules a week, that's over 9 weeks of service from one box. For a high-volume bar doing 100+ mules a week, it's still a full month. No counting inventory, no mid-week reorders, no cooler restocking. The BIB just sits there and works until you replace it.

Original vs. Extra Spicy — which BIB is right for your bar?

We make two ginger beer BIBs. Same price, same 3-gallon format, same soda gun integration. The difference is heat profile and which cocktail program they serve best:

Top Hat Original Ginger Beer BIB — 3 Gallon
The all-rounder · balanced heat · citrus-forward

Flavor profile: Clean ginger heat with bright citrus (cold-pressed lime and lemon) and a subtle tang from apple cider vinegar. This is a balanced, crowd-pleasing ginger beer that works across your entire cocktail menu — not just mules.

Best for: Moscow Mules, Kentucky Mules, Dark & Stormy, ginger beer highballs, zero-proof ginger beer (standalone or with citrus). If you're running one ginger beer line and need it to cover everything on your menu, this is the one.

Price: $135.00 per 3-gallon BIB $180.00

Makes: ~460 drinks  |  Cost per drink: $0.29

Order Original Ginger Beer BIB →
Top Hat Extra Spicy Ginger Beer BIB — 3 Gallon
Double the ginger · capsicum warmth · for menus that want heat

Flavor profile: 2x the ginger intensity of our Original, with added capsicum warmth that builds across the palate. Same cold-pressed citrus base and ACV backbone, but with a pronounced slow-burn finish. This is a ginger beer that announces itself in a cocktail.

Best for: Spicy mules (a menu differentiator — very few bars offer this from the gun), Dark & Stormy builds where the rum needs a strong ginger counterpoint, bourbon-forward cocktails, and any menu positioning around bold or spicy flavors. If your bar already does well with spicy margaritas or spicy food, this is the ginger beer your guests are looking for.

Price: $135.00 per 3-gallon BIB $180.00

Makes: ~460 drinks  |  Cost per drink: $0.29

Order Extra Spicy Ginger Beer BIB →
Pro move: run both lines
If you have two available soda gun lines, run both BIBs. Put "Moscow Mule" and "Spicy Mule" on your cocktail menu as separate items at the same price. Two SKUs from one spirit, two different ginger beers from the gun, zero additional labor or complexity. Your server just tells the bartender which button. That's two mule sales per table instead of one — and your guest feels like they're choosing from a curated menu, not a one-size-fits-all drink.

Menu plays: how to sell more mules with draft ginger beer

Having craft ginger beer on your gun isn't just a back-of-house efficiency play — it's a front-of-house revenue tool. Here's how smart operators are using it:

1) The mule menu
A Moscow Mule, a Kentucky Mule (bourbon), a Mexican Mule (mezcal or tequila), a Dark & Stormy (dark rum), and a Spicy Mule (Extra Spicy BIB). That's five cocktails from one or two ginger beer lines and five different spirits. Dead simple for your bartender. Looks like a curated program on your menu. Every drink is profitable because your mixer cost is $0.29 regardless of which spirit goes in. This is one of the highest-margin cocktail sections you can build.
2) "Craft ginger beer" as a selling point
Your guests are already ordering mules. They have no idea what ginger beer is in them at most bars — it's usually whatever the distributor had. Put "made with craft ginger beer" on the menu next to your mules. Or: "Craft draft ginger beer by Top Hat Provisions." That menu callout justifies a $1-2 price premium over competitors and signals quality without any additional work from your staff. The ginger beer does the marketing for you.
3) Non-alcoholic ginger beer — a zero-proof menu item at zero additional cost
Draft ginger beer straight from the gun — no spirit, add fresh lime, serve in a Collins glass. Price it at $5-7. Your cost is under $0.30. That's a 95%+ margin on a menu item that appeals to designated drivers, sober-curious guests, pregnant friends, and anyone who wants something more interesting than a Sprite. The zero-proof cocktail category is growing 30%+ year over year. You already have the product on your gun — you're just not selling it yet.
4) Happy hour batching
Moscow Mules are one of the most popular happy hour drinks in America. With draft ginger beer, you can pre-batch pitchers: vodka + lime juice in a pitcher, guest pours, top with ginger beer from the gun at the table (or bartender tops). Or just run mules as a happy hour special at $6-8 knowing your total COGS (spirit + ginger beer + lime) is well under $2.00. At a $7 happy hour price, that's a 70%+ margin on a drink people actively want to order.

Frequently Asked Questions

How many drinks does one 3-gallon BIB make?

One 3-gallon BIB contains 384 oz of concentrated syrup. At a 5:1 ratio through your soda gun, that produces approximately 2,304 oz of finished ginger beer. Using 5 oz of ginger beer per Moscow Mule (the standard build), one BIB makes approximately 460 drinks. For a bar selling 50 mules per week, that's over 9 weeks of service from one box.

Will this work with my existing soda gun?

Yes. Our BIBs use a QCD (Quick Connect Disconnect) fitting. Most bars run Coke or Pepsi soda gun lines, which use a different connector — so we include a free screw-on QCD-to-Coke adaptor or QCD-to-Pepsi adaptor with your first BIB purchase. It threads onto your existing line in under a minute. Once the adaptor is on, you're set — swapping BIBs takes about 60 seconds.

What's the difference between Original and Extra Spicy?

Both BIBs are the same price ($135), same 3-gallon format, same soda gun connection, same ~460 drinks per box. The Original is a balanced craft ginger beer — ginger heat with bright citrus and subtle tang. It's the all-rounder that works across mules, highballs, and zero-proof drinks. The Extra Spicy has double the ginger intensity plus capsicum warmth — it's for bars that want a spicy mule menu item or serve dark-spirit-forward cocktails where the ginger needs to hold its own. Many bars run both.

Is this real craft ginger beer or just flavored syrup?

Real craft ginger beer. Our BIBs are formulated with organic ginger extract, cold-pressed lime juice, cold-pressed lemon juice, apple cider vinegar, and pure cane sugar. No HFCS, no artificial flavors, no artificial colors. It's the same ingredient philosophy behind our retail products, engineered for commercial soda gun dispensing at a 5:1 ratio. The ginger heat is real. The citrus is real. Your guests can taste the difference.

How does the shelf life compare to bottled ginger beer?

Unopened BIBs have a shelf life of 12+ months. Once connected to your soda gun, the bag-in-box format keeps the syrup sealed — the bag collapses as product is dispensed, so no air enters the container. There's no oxidation or flavor degradation over time. The last pour from a BIB tastes identical to the first.

Do you offer volume pricing for multi-location accounts?

Yes. We work with individual bars, restaurant groups, hotel properties, and hospitality management companies. Volume pricing is available for recurring BIB orders across multiple locations. Visit our wholesale page or email orders@tophatprovisions.com and we'll build a program for your account.

Can I also get ginger beer in cans or 32oz bottles for my bar?

Yes — we offer wholesale case pricing on Top Hat Craft Ginger Beer 7.5oz cans (24-pack cases) and 32oz syrup bottles (12-pack cases) for bars that prefer individual-serve formats or want to offer a bottled option alongside their draft program. Cases are available on our wholesale page.

We also do RTD canned cocktails — can you supply in bulk?

Absolutely. We supply ginger beer concentrate in 55-gallon drums and 270-gallon totes for RTD manufacturing. If you're a distillery or brewery looking to can a Moscow Mule, Dark & Stormy, or any ginger beer-based RTD, we can provide production-grade concentrate with FIDS documentation for TTB compliance.
