The mistake most zero-proof drinks make is removing alcohol and replacing it with nothing. Alcohol does real work — it carries aroma, adds body, and contributes bitterness. When you remove it, you need to replace those functions intentionally.

Pathfinder's earthy, herbal, slightly resinous character is one of the best pairings for real ginger beer in the zero-proof world. This isn't a "mocktail mule" — it's a genuine cocktail that happens to be alcohol-free. The ginger heat is real. The botanical complexity is real.
Low-ABV option: Add 0.5 oz bourbon alongside the Pathfinder for a split low-ABV hybrid.
Lavender · Lemon · Iced Tea · Built · 5 min · 0.0% ABV
3 oz strong lavender tea (chilled), 3 oz fresh lemonade, sparkling water to top, ice, lavender sprig + lemon garnish.
The Arnold Palmer gets a floral upgrade. Lavender tea adds botanical depth that lifts the lemon without sweetening it. Completely alcohol-free by design — and genuinely one of the most visually beautiful drinks in the collection. Add a Butterfly Truth Serum float for the color shift.
Ruby Go Wild Paloma · Fresh Jicama Juice · Lime · Built · 3 min
4 oz Top Hat Ruby Go Wild Paloma Mix, 1 oz fresh pressed jicama juice, 0.5 oz fresh lime juice, sparkling water, ice, lime + salt rim optional.
This recipe was born at California Academy of Sciences Nightlife — we served it to 3,000 guests every Thursday for years. Fresh jicama juice adds clean, slightly starchy sweetness that rounds the grapefruit bitterness in a way no other ingredient does. The Paloma structure makes it naturally zero-proof-friendly.
Add a spirit: 1.5 oz tequila or mezcal turns this into a full Paloma cocktail.
Spicy Agave · Lime · Sparkling Water · Shaken · 3 min
1 oz Top Hat Spicy Agave Nectar, 1 oz fresh lime juice, 4 oz sparkling water, shaken over ice, salt rim optional.
Chili heat brings structure and intensity to a zero-proof margarita in a way that sweetness alone never can. The Spicy Agave Nectar is doing the work of both the agave sweetener and the heat element. Shake it hard, serve over fresh ice, and this stands on its own without spirits.
Add a spirit: 1.5 oz tequila or mezcal — this is also the base for our Spicy Margarita.
Cold Brew · Simple Syrup · NA Spirit · Shaken · 3 min
2 oz cold brew coffee concentrate, 0.5 oz simple syrup, 1 oz zero-proof spirit alternative (Lyre's American Malt or Seedlip Spice 94), ice, shake hard 15 seconds for the foam.
The Espresso Martini is more about ritual and texture than alcohol. Cold brew concentrate delivers the coffee intensity. Shaking hard over ice builds the foam that makes it look and feel like the real thing. The zero-proof spirit adds body and aromatics that prevent the drink from tasting flat.
1.5 oz Monday Zero Alcohol Mezcal, 0.5 oz Pathfinder Hemp & Root, 1 oz pineapple juice, 0.5 oz fresh lime juice, 4–6 oz Top Hat Craft Ginger Beer, 3 dashes bitters, sage garnish.
The Xanadu was originally served to 250,000 people at Coachella. The full zero-proof version uses Monday Zero Alcohol Mezcal for the smoke and Pathfinder for the bitter botanical depth that Amaro usually provides. Shaken for a tight, cold core then lengthened with Top Hat Ginger Beer. The result is everything the original Xanadu promises, zero alcohol.
