Why most sugar free cocktail mixers taste wrong
It's not the sugar removal. That's the easy part. The hard part is what you replace it with.
The sucralose problem
Sucralose works fine in cold soda at low concentration. It falls apart when you combine it with citrus, carbonation, or bitters — which is everything a cocktail is. It goes metallic fast and leaves a hollow finish. Aspartame has the same problem: hollow sweetness with no body, no interaction with acid.
What monk fruit does differently
Monk fruit extract has a clean sweetness that doesn't amplify heat or go bitter with acid. It doesn't leave a finish. In a well-built cocktail, the sweetener should disappear — it balances acid, softens spirit, then gets out of the way. Monk fruit does that. Sucralose doesn't.
The real ingredient difference

The G&T is the most demanding test for a sugar free tonic — the quinine bitterness has to be real enough to push back against gin botanicals. Our Sugar Free Tonic uses cinchona bark quinine and real citrus oils. The dry, bitter backbone is there. It tastes like a G&T.

1.5 oz tequila or mezcal, 6 oz Top Hat Sugar Free Margarita Mix, 0.25 oz fresh lime juice, ice, salt rim optional, sliced lime garnish.
Most skinny margaritas go heavy on lime and thin on everything else. The Sugar Free Margarita Mix has the orange built in alongside real lime — the full tart-sweet-citrus balance without the sugar. Shake it hard. Strain over ice. It tastes complete.

1.5 oz vodka or gin, 0.25 oz elderflower liqueur or syrup, 0.5 oz Lillet Blanc or zero proof aperitif, 5 oz Top Hat Sugar Free Cucumber Lemonade, 0.25 oz fresh lemon juice, ice, sliced cucumber & dehydrated lemon wheel or fresh mint garnish.
The Sun Goddess is the one that fools people. Floral, citrus, cucumber — zero sugar — and it looks as good as it tastes. The elderflower and Lillet Blanc layer over the cucumber lemonade base and create something that feels like it took much more effort than it did.
Zero proof: Skip the spirit, swap Lillet Blanc for a splash of white grape juice or non-alcoholic aperitif. The cucumber lemonade carries it.
