Butterfly pea flower extract is naturally blue-purple. Add lime — which is acidic — and it shifts pink to violet in seconds. There's no dye, no trick. It's just pH chemistry doing its thing in front of your guests. The East India Tonic brings enough quinine backbone that the drink actually tastes like something, not just looks like something. That's the combination worth making.
Ingredients
- 1.5 oz gin (dry London style — Tanqueray, Beefeater, or house well)
- 5–6 oz Top Hat East India Tonic (7.5oz can or your soda gun BIB)
- Float: 1 oz Top Hat Butterfly Truth Serum (butterfly pea flower tea concentrate)
- Garnish: lavender sprig & dehydrated citrus

Method
- Add 1.5 oz gin to a tall highball glass.
- Fill the glass completely with ice.
- Pour 5–6 oz East India Tonic slowly down the side of the glass (can or soda gun).
- Float 1 oz Butterfly Truth Serum over the back of a spoon so it rests on top of the tonic.
- Do not stir — the indigo blue will bloom and shift as the drink is enjoyed.
- Garnish with a lavender sprig and dehydrated citrus.
Pro move: Pour the tonic slowly down the side of the glass rather than straight over the ice. It slows the color shift so guests can watch the indigo blue bloom pink and violet in real time. That's the moment worth making.
